Why am I good?
I am prepared with the best pork from Piedmontese farms, Barolo DOCG from pure nebbiolo grapes, the ultimate expression of Piedmontese wines, and a mixture of selected spices, such as black pepper, cloves, garlic and nutmeg, are added to my mixture. These ingredients give me a unique appearance and taste: when cut, my slice is ruby red in color, with a perfect balance of lean and fatty parts; I am soft and firm; my scent is delicate, with aromas of garlic and wine; my taste is sweet, never sour, and slightly spicy.
What makes me excellent?I have PGI certification, the European recognition to the quality of a typical Piedmontese recipe, whose sui generis production dates back to around 1700. They are an expression of the typicality, tradition and high quality of Piedmontese charcuterie and of the strong link with the territory of origin: the area of production and aging includes the entire territory of the Piedmont Region. Production is carried out by following a strict “production specification” in which all stages of the production cycle are regulated and must be strictly monitored, ensuring traceability throughout the supply chain, starting from breeding to sale.

I come from an ancient traditionThe stages of the production cycle stem from ancient local traditions.
Moderate ventilation and the presence of Föhn fosters optimal meat maturation even with shorter maturation periods. THAT’S WHY PIEDMONTESE SALAMI HAS A BALANCED, NON-ACIDIC TASTE AND IS TRADITIONALLY EATEN A LITTLE SOFTER. PIEDMONT RED WINE (from Barbera, Nebbiolo or Dolcetto vines) is an ingredient that strongly characterizes Salame Piemonte. Written evidence of this peculiarity comes from Giovanni Vialardi, the royal cook, who as early as 1854 included in the recipe “a good glass of Barbera wine.” In addition, the typical recipe calls for the PRESENCE OF SPICES AND AROMATIC PLANTS such as black pepper, cloves, garlic and nutmeg. Due to its geographical location, Piedmont is located along the “SALT ROAD,” which is the obligatory passage of salt and spices from the Italian coast to Northern Europe.
